Pancake day maybe over but who said the fun has to end there? I have loved seeing your pancake stacks, plates and bowls over this week and I wanted to share a new yummy recipe for the weekend.
60G mashed banana
40g dairy free yoghurt
4g flax seeds
50ml dairy free milk
1tsp lemon juice
50g gf self raising flour
1/4 tsp baking soda
Whisk the wet ingredients together before mixing in the dry then let sit for a few mins to thicken.
Heat a pan on the stove, add 2 heaped tbsp of batter to the pan and cook until bubbly then flip to cook the other side.
Stack your pancakes and top with more soy yoghurt, almond flakes, berries and our maple pecan almond butter and some salted caramel gnawbles.
