Berry gooey Gingerbread Fudge Bites
2 bananas (fairly ripe… see below)
2 scoops protein powder of choice
1 cup of cocoa powder
1/2 cup nut butter from the lush Grindnuts range
1/4 cup nuts of choice, roughly chopped
1 cup berries (fresh or frozen, but frozen is cheaper )
Preheat oven to 180 C and line a 7-inch square baking tin with baking parchment
Except for the berries and nuts: Blitz all ingredients in a food processor until smooth in consistency (this is why the ripe bananas are important. I used firm ones and could barely get the dough out the food processor cup as the cocoa powder turned the mix into a solid lump…)
Transfer the mixture into the prepped baking tin, aiming for an even(ish) surface before pressing in the berries and chopped nuts.
Bake for 20 minutes, and let the fudgies cool in the tin before you slice them up and pig out
They’re best kept in the fridge.
